    Somewhere I read that using sparkling water will make your bread more fluffy. Low gluten flour helps too. Your's is still a nice looking loaf.

    Possum

    I've had possum many years ago, but breaded and fried, not smoked. As I recall it had somewhat of a skunky flavor. Brining might be a good idea to remove some of that flavor. Soaking it in buttermilk for a few hours might help also.

    Try it with the 85/15 fat content and it should be ok. The leaner mixes of ground turkey tend to be too lean and dryish.

    Yep, as said before, a water smoker will never give you crispy poultry skin unless modded or subbing sand as a heat sink. I'm wondering if a crisping with a propane torch would work, kinda like crisping a creme brulee? Chefs???

    Home caned Salsa?

    I used to just rough chop them, but lately I've been skinning them first. The skins tend to roll up and look ugly in the salsa if left on. Poach them for about a minute in boiling water, then drop them into some ice water. The skins just slip off after that.

    I did one last year with stuffing, green bean casserole, and real cranberry sauce (not the canned crap). It was awesome. Sort of like when the Thanksgiving flavors combine when you clean up your plate.

    I might give it a try, but I don't think Aquafina or most other bottled waters are a good choice. Many are just the same as tap water, only bottled. Buying or making your own distilled seems safer.
