As I Contemplate the amount of wood I want to keep, I realize the more wood I keep, the more chance for bugs and stuff. What are you guys spraying to help with larger supplies of wood. Mine is stored on a 2 tier rack about 6’ away from house on concrete. I want to start a bigger wood stock in...
250-275* temp range for cooking, but expect spikes below and above but that will be my average. Just going to wrap in paper when she looks ready and has nice bark. Almost 5hrs now and it showing 157*. I will be throwing some pork spareribs on now too
Getting this bad boy going. Smoker has been warming up, took a little longer to get fire started with it being an unusual colder morning. Hoping to get it on in the next 20 mins or so.
All done pulled them. Probe tender around 199/200*. Going to let them rest wrapped on the counter. I was thinking about giving the a little more time, but the last hour the wind has been picking up. Total time almost 7 hrs. Temp between 250-275. All oak wood.
I liked the all wood, less ash but...

I got up a little early just to run the smoker for a...
Good to hear! He said it was post oak. But he also had some red oak on the other side so maybe a few pieces got mixed on accident. I was a little nervous with it being my first time, but atleast now I have a starting point in what post oak should look like
Been bbq’ing for years, but been a charcoal grill guy. Use store bought wood chunks for my WSM, but now that I have my offset I starting looking for seasoned wood. Seen a sign on the way home today, so I decided to stop at this little driveway. Guy had some oak so I bought some. Hopefully it’s...
Another thing that is helpful is a smaller ash can. This one fits right under the firebox, so I have been able to dump my ash to keep a clean burn on this longer smoke
