    Split so it's still attached at stem, brush with olive oil, salt and pepper, cut side down to lightly sear, then maybe turn over, let cool, squeeze lemon over it and grate parmesan cheese (or use Caesar dressing). Cook hot and fast (maybe 1 minute) and it'll stay crunchy.

    No peanut sauce here. Out peanut butter jar is being used to give a dog antibiotics (raw nose). But the marinade was just as good for a sauce, if not better. Sate (often spelled with an "e") are used in other cultures besides Thai. Different spices/sauces, but all on a stick.

    Top round steak, sliced thin, a Thai marinade for 3 hours, threaded onto skewers, grilled over high heat. Topped with sauce and served with purple cilantro potato salad, cucumbers, eggplant. Everything homegrown, including beef. Beef was very tender and tasty.

    The outer membrane will be tough. But most of the meat is on top, and it'll only be problematic when eating the meat between bones. The inner membrane isn't as tough and helps to keep the meat from falling off the bone.

    Hey, yea. Those ribs look pretty meaty. And it's hard to beat $5/lb. I recently got some beef back ribs at $4.50/lb from Costco. Of course not as meaty. But if you're new to beef ribs, look for some backs, I think you'll like 'em.

    CivilSmoker made me do it. Costco beef back ribs, precut. Seasoned with salt and pepper, then cooked on Santa Maria grill over red oak, 275-300 F (7+ hand seconds). Brushed with Korean glaze from dirtsailor close to end of cooking. Thanks for looking.

    I love birria. I actually prefer it served as a beef consume/soup rather than tacos. And its easier. I've never smoked the beef, just braised it. Not sure I could taste the smoke with all the chiles in it.
