Thanks for the brine receipe. I figure I'll drop it in tomorrow night and let it brine whiel I'm sleeping.
It's about 4-5 pound chicken, so the only other question is do you have an idea about how long it will take roughly.... I'm guessing about 5 hours
OK, I did a search on brine and came up with 20 pages+ of hits. But in the first few I didn't see one on how to brine.
I'm looking to smoke up a small fryer chicken Thursday. I would bring it tomorrow. What do I do to brine it?
As much as I love smoke fish, fry them filets up, oh man is pike good when it is fried. My grandfather made me some once... just wow...
Gratz on the catch also, those Pike can fight pretty hard.
@Fire it Up - Actually, I don't use mesquite simply becuase it is used so much here. I did it on Hickory.
Turned out great though. Yeah, I didn't buy the $6.00 a pound cut from the butcher, that piece of meat was a Kroger brand CBB with season pouch.
Took a solid 7 hours or so to get done...
I thought I would try a brisket this weekend, but 9 pounds is a bit much for the wife and I. I went to Frys and they offered to cut one small for $6.00 a pound
So I got a Corned Beef brisket.
Here it is ready to go into the smoker:

I've seen several folks put the meat they are going to smoke in a pan.
Is this just to catch the juices, or does it do something to the flavor. just curious.
