I do not know about the wood but those pig nut pecans are super bitter to the taste.
As kids we would bring them to school and trick other kids into eating them. To say the least they would pucker you up! It could be the wood.
Any of you guys have good experinces smoking hens?

I think hens have great flavor but tend to way TUFF. Is there a cure for that?
It's always good to start with clean sterile glass containers.
Make sure to cut that vinegar in at least half with water.
I like it cut to one quarter vinegar to 3/4 water.
I al so like to bring the seasoned liquid to a boil.
