    Frank Davis's Fried Turkey

    We have always done turkeys in straight hog lard. I bet you could mix peanut and hog lard and get good results. Bacon is very interesting though.

    I would peel the shrimp and keep the heads and peels. Put them in a flat pan smoke them then use them for stock.

    Bitter flavors

    I do not know about the wood but those pig nut pecans are super bitter to the taste. As kids we would bring them to school and trick other kids into eating them. To say the least they would pucker you up! It could be the wood.

    Any of you guys have good experinces smoking hens? If so please explain a good procedure. I think hens have great flavor but tend to way TUFF. Is there a cure for that?

    It's always good to start with clean sterile glass containers. Make sure to cut that vinegar in at least half with water. I like it cut to one quarter vinegar to 3/4 water. I al so like to bring the seasoned liquid to a boil.

    Looks good.  Did you use jellitin to make it jell? Or did you use boiled skin?
