    Pulled Pork just because

This time I did not wrap the butts at all!! The one on the left had hotsauce and taco seasoning, the one on the right mustard and Jeff's Rub.  Total cook time was in the neighborhood of 13 hrs @ 225 - 230. I will admit, this is by far the best bark I have ever gotten. Thanks for the compliments!!

    Pulled Pork just because

This is from last weekends smoke: My wife had noted a few days before that we were out of BBQ Pulled Pork, and Pulled Pork Taco Meat. I try to never let that happen, but sometimes I fall down on my job. Anyways, I've been "itching" to try out the meat from our local Cash & Carry (I've always...

For all of you that have served in the military

I'd just like to take the time to tell everyone here that has served (or are still serving) in the military, that those of us that enjoy the freedom and safety that you are or have provided to us, by dedicating your time, REALLY APPRECIATE IT!!  There is no end to how thankful I am for living in...

Hey hey new member from.the netherlands here

Welcome Patrick,  That's some nice looking Q you have there. I actually work for a Dutch company, and have many Dutch colleagues.  You don't find many Dutch that BBQ though, seems like grilling is far more popular there. When I go to The Netherlands, I stay in Eindhoven, and work in Veldhoven.

    Pulled pork butt

My last pulled pork (still need to post my q-view) last weekend, I brought them up to 203 internal, then let rest in a foil pan wrapped in towels and tucked in the oven.  They both pulled like a dream!, and plenty of nice bark, since I didn't wrap them for any of the cooking time.  This was my...

    pellet vs bradley

I can't help with Information on a Bradley, but I have a Traeger and think it's a great "starter" pellet grill.  I say that, because for me it seems more of a starting point to see how you like pellet smoking, and then next will get a "beefier" smoker.  I know I am planning to get the Yoder...

Cure vs. "Canning and Pickling Salt"

I have to get Tender Quick or curing salt from my local butcher, since there are no local stores that sell either.  I did buy my current bag of cure #1 online. They sell it in a 1 lb bag, so there is plenty, since most recipes use like a tbs (by weight is better) at a time. At the butcher shop...

When to sauce ribs? (When the typical cook-time isn't enough.)

I've come to not saucing any of my meat while on the smoker. I use a good rub (either Jeff's or my own), and complete the smoke.  I let the eater decide how much and which sauce they want to add.

Making "carnitas" style pulled pork in the smoker?

I think I've done exactly what you're looking for.  When the freezer runs low on pulled pork, I have been buying the 2 pack from Costco, or Cash & Carry.  I season one of them up with a BBQ rub(Jeff's), then for the 2nd one, I rub a little hot sauce on it, then cover it with taco seasoning.  I...

    First brisket for me

Rub for a brisket is really subjective to the pallet of the eater.  I know I do not particularly like sugar/sweet on beef, so when I do my brisket, I hit it with a little thick Worcestershire sauce, then heavy on the pepper, garlic and onion powder (I use little salt due to health reasons).  I...
