Trying my hand once more. The roast I did didn't turn out the greatest (I still ate it and it had better flavor than if I'd done it in the crock pot) so I'm giving this another go. Today's smoke will consist of a beer can chicken and I'm going to try my hand at a fatty. Once I'm up and running...
Can the wood pellets designed for something like the Treager models of smokers work in an charcoal/wood smoker? Anyone have any experience with that? Just Curious

Thanks rwc565! I will keep all of these suggestions in mind. I 'mopped' the thing with a bit of a 'teriyaki' type mop (some soy sauce, a touch of rice vinegar, a little brown sugar, and water to thin it all down). It came off smelling like teriyaki beef jerky...problem is it was just about as...
Everything I've read says to pull the membrane off...don't know if that's the same thing your seeing or not.
Plus, I'm new and I don't know what the H-E-*-* I'm talking about sometimes, but I like to pretend to help! lol!

Thanks Piney.
I'm a bit disappointed overall to be honest. I don't know what I was expecting as I've never really had true bbq before (does Famous Dave's count?) let alone tried to make it myself. I hope I can keep learning and get something worked out. My wife and I are planning to have...
Hey Richtee:
It's been on for 4.5 hours and internal temp is hovering around 145-ish. Recommendations? If I foil etc. the internal temp will still increase, yes? How long should I wrap before slicing and serving? Thanks for the input...

Thanks for the rec. on the french dips. Sounds tasty fo' sho'.
The temps are now fluctuating a bit. I think the last time I added coals I didn't put enough on and the temp dipped below 200 for a bit. I added more coals and opened the damper all the way, took a shower and the temp was a bit...
So I'm like a little kid who can't stop picking his nose even though he's been told to over and over again. I can't keep my head out of the smoker or the sfb even though I know I should. So far:
The temp gauge on the grill seems to be consistent with the 'on grill' thermometer I bought from...
Thanks for the links and ideas. I love instructables! Well, I got 'er up and started. The roast isn't huge, so we'll see what happens. *fingers crossed*

Thanks Richtee! I thought of one other thing...
I don't have a chimney starter, but I am using my Char-Griller gas grill that has the sfb. Can I use the side gas burner somehow to get the coals started then throw them in the sfb? Otherwise what is the best way to get the coals started...
