    1st Butts w/Q-view

So I rolled outta bed at 4-ish to get my butts started. I decided to rub and store last night. I think I'm getting the whole charcoal thing down now...the chimney helped a crap ton. Temps were stabilized at about 242F and I got them on just before 5. I'm using RO lump on a Minion method with...

    Silly question?

Sounds like a good plan! The wife told me she has a problem with eating something called a 'fatty'. She said if it was called something else she might try it...

    Silly question?

Excellent. I too am doing a smoke tomorrow (butts, chix, and a slab of ribs just cuz) so that info will come in handy. I am hosting a little gathering and need to have everything ready by 6 pm-ish. I'm doing two 6.5 lb butts so I'm hoping *crosses fingers* that if I start by 4:30 am that the...

    Silly question?

Does the starting temp of the meat affect the plateau? I mean, if I throw a butt on the smoker right out of the fridge will it have a longer plateau than say a butt that's been sitting at room temp for a few hours (obviously it will take longer to cook...)? I'm sure this is a silly question...

    Rubbing my butt...

Thanks for all of the great advice here. My main concern was whether or not leaving the rub on too long would dry it out. I'm not convinced that I want to prep them tonight. I'll probably just prep them tomorrow night. They won't sit too long wrapped with the rub that way...unless, of...

    Rubbing my butt...

Most of what I've read about rubbing a butt has said to do so 24hrs. before you smoke it. Is there any harm in letting it sit with the rub on longer? I'm doing a cook on Saturday. I plan on having the butts on the smoker around 5 am-ish. I want to prep them a head of time, but I will be at...

    HY-VEE........BOSTON BUTTS...... .99/lb

of course they are...I'm throwing a gathering this weekend and have been watching the prices at Hy-Vee the whole time to no avail. I finally decided to buy at Sam's this weekend for $1.68/lb cuz it was the best deal I had found. Darn it all to heck! I'll stop by and check them out anyway... J-

    Smoking time considerations

Amen to that! I'm looking at getting two 5/6 lbers. and starting them at the butt-crack of dawn or a bit earlier. I thought about setting up my telescope and doing some star gazing and smoking on the overnight! J-

    Smoking time considerations

Thanks for all of the help and info. Wutang- I am planning to start the butts in the early am then adding the chix mid-day so that everything is hopefully done by 6 or so. I am doing the burgers and dogs on the gasser as guests arrive etc. so that they are ready to go just in case the smoked...

    Smoking time considerations

Next weekend I'm having some colleagues over for a back to school gathering. I'm planning on smoking a couple of chickens and a couple of butts (of which will be my first attempt) and also having some burgers and dogs available as well. Up until now the most I've ever had in my smoker at one...

Thanks for posting this! So, I'm assuming you just rubbed it on then stuck it back in the fridge? Did you wrap it in plastic wrap as well? Thanks again for the info! J-

    Turkey smoke not going well...

Thanks for the advice all. In an ironic twist, the Webber Chimney I purchased online came today...after I pulled the bird. I wound up giving it 20 mins in the oven at 375 to make sure it was done. It tasted great although I thought the breast was a bit drier than I thought it might be. I...

    Turkey smoke not going well...

That's what I've been doing (been using my side burner), and wound up doing that and adding it to the sfb. I'm finally at about 260-ish. I was hovering around 200-220 for a long while. Hopefully I can keep her here now and let'er go. Plus, I'm antsy and am always f-in around opening things I...

    Turkey smoke not going well...

So I'm finally getting the chance to smoke again and it's not going well. I have not quite mastered the art of getting the charcoal ready to get my grill up to temp. I have been struggling to keep the temps high enough to cook this bird. I am using royal oak natural wood charcoal and seems to...

    Pork Spare Ribs

Found some for $1.86/lb. today. Not bad for what I've been seeing around here. Only thing is; I don't know how to pick out 'good' ribs. Hopefully what I did buy will be good. It was $13 worth so I hope I don't F-things up! J-
