B E Autiful turkey! Love the color also. I was curious about the stuffing as well. How much longer do you think it took to finish being stuffed as opposed to not? Did the stuffing get a good smoke flavor?
I need to try that as soon as I can get my hands on a decent turkey!!

I agree with all the above. I started out with the Cajun injector 30 inch electric (same as the 30 inch MES). It worked fine, just not enough room for me, and a little slower on the temp recovery time. The newer 40 inch MES has a temperature prob built in ( I don't completely trust it but it is...
I have a porcelain coated cast iron dutch oven. It is awesome. Has the heat properties that you want and you can clean it with soapy water if you need to no seasoning needed!! It is pretty good in the nonstick department also, as long as you preheat well.

I had a super lean 16lb brisket get done in about 6.5 hours. It blew me away. I was expecting it to go at least 10 hours or so... I think it had to do with it being so lean. As said before "Its done when its done" weather is too quick or too long....
