    B E Autiful turkey!  Love the color also.  I was curious about the stuffing as well. How much longer do you think it took to finish being stuffed as opposed to not? Did the stuffing get a good smoke flavor? I need to try that as soon as I can get my hands on a decent turkey!! Jeff

    How to seasoning cast iron

    I have a porcelain coated cast iron dutch oven. It is awesome. Has the heat properties that you want and you can clean it with soapy water if you need to no seasoning needed!!  It is pretty good in the nonstick department also, as long as you preheat well. Jeff

    Brisket was done in 4.5 hrs ?

    I had a super lean 16lb brisket get done in about 6.5 hours.  It blew me away. I was expecting it to go at least 10 hours or so...  I think it had to do with it being so lean.  As said before "Its done when its done" weather is too quick or too long....

    I would smoke it as a whole piece of meat then separate the flat from the point, cube the point, rub, sauce, smoke and enjoy!!

    Those big mushrooms are supposed to be pretty good. Don't remember the name, but on the grill the wife says they have an almost meaty texture.
