Sounds good to me. I wasn't really considering that OK Joe for me anyway. I've got a cousin in Bozeman that smokes with an electric and I was thinking he might be interested in doing some stick burning.

I got it at Cosco about 5 years ago. It had a Oklahoma Joe name and sn# on the tag that is on the lid. As far as I know it is it's own brand. They might have been bought out by now, don't know. The thing wieghs about 200 lbs. Heavyduty.

Off-topic, but it seems weird to me that you're having trouble getting up to temp in your MES. Do you have the big 40" with the smaller heating element? I have the smaller old 30" and I've never had trouble maxing out temperature even on a cold Montana winter day . . . how bout the rest of you...
I haven't found that wind bothers my MES much, if at all. They're very well insulated.
As for wheels and higher up, I wanted the same thing. Bolted it to a rolling printer stand, which gave me mobility, height, and storage.

I've found this thermometer to be a lifesaver as a backup as well. Not digital, but gives the meat temp and the chamber temp. I have two of them taht I use regularly. Yes, you have to open your smoker to see the temp, but I generally only do that when I know that the timing is approximately...

FWIW, I've found that my brines are much more effective in imparting flavor if I bring the water to a boil and then add in the ingredients. I always used to just cold mix my brines, but never again . . .

FWIW, I bought the cheapest paint I could find at Wal-Mart. My drums have had little runaway episodes where they've hit 400* and I typically smoke between 250-300 and I've never had any issues with the paint being affected.
