I'm in for the ride. I've been looking into these direct grill/smokers alot lately. Are you putting an adjustable grate or firebox on it? Where you can move the fire closer or further from the meat?
@Colin1230 is spot on. Learn your smoker and let it settle in where it wants. It's not an oven so 250 is not actually 250. it can fluctuate from 225 to 300. Not a problem.

I agree with @Chasdev You got it so go ahead and use it. The green stuff wait for it to season.
You may want to think about getting it out of the garage tho. Wood piles invite uninvited guests you probably don't want.

Congrats, it's gonna be the longest 4 months of your life so far. Atlantic beach is a great spot and being inland a little bit is a good idea. Like others have said there is great fishing, Morehead is right there and plenty for the family to get into. There are jet ski rentals, fort macon isn't far.
That's the part I enjoy, tweeking things to see what makes a difference. Hopefully for the better, sometimes I find things I'd never do again or are a waste of time. Good luck on the injection. Let us know how it works out
A larger kettle isn't a bad idea. They are very versitile and there are a lot of add ons you can get for it. Not sure where you are but have you looked into the Old Country's? For not much more you can get a heavier smoker that is welded together...
