Okay ............... williamzanzinger and I will test the beverage method and meowey and richtee can do the standing method and we can compare the results.
I propose that we do a test. meowey and richtee can start standing and you and I can be the control group and not change anything. In 3-4 years we can compare our results!
Here I sit outside by my smoker using a laptop with wireless technology hooked up to the internet to communicate all over the world as I cook meat using the oldest method known to man.

I didn't care for your title. Any smoke is a good smoke! You just have room for improved results. Don't give up on it. Some time spent on the SMF will do wonders for your results. Lets hear about tomorrow's perfect brisket and don't forget the QVIEW!
I usually have great results with spare ribs with a great smoke flavor. Probably the cut. Nothing like a good reason to pull the smoker out and try'em again!
I agree with ERAIN. Vacuum sealing might be a good way to go. You might try the Reynolds Handi-Vac Vacuum Sealer. I paid only $10.00 for the unit and several sample bags. Some of the forum members said that the performance was spotty but mine has worked pretty well for me so far.
Please note on the Tequila marinade I posted earlier:
2-3 limes (grate the lime peel and squeeze the juice. Discard the remaining pulp from the limes)
1/3 cup tequila
1/4 cup olive oil
2 jalapeno peppers, seeded
2 teaspoons sugar
2 teaspoons chili powder
1/2 teaspoon salt
