Traveling in SC this week. Tonight I ate at Maurice's Piggie Park in West Columbia. Pretty new to having ribs basted with a mustard style sauce. This was pretty darn good. Hats off to you Carolina guys/gals for some great BBQ! Anyone have a good mustard sauce that they would be willing to share?
I love pork with rosemary! For me a little rosemary goes a long way as it is a powerful spice. I love pork loin with a side of sliced apples and a cream brandy sauce.
The butts are going to be like a big heatsink. Watch your timing and temps on the butts and don't start the ribs to early if you want to eat everything at the same time. Also remember that the butts will probably not finish at the same time. I did two 8 lb butts last weekend and they finished...
