I haven't smoked in weeks, wife put me on a mission to clear out the freezer bite by bite. I got the job done and now its time to fire it up. Its been rainy for days. I figured I'd just put an umbrella over the smoker and have at it. Unfortunately, the wind started to come up today. It...

    Smokers built out of wood?

The chamber is wood, the firebox is metal generally. I saw a build of an UDS that had a concrete firebox in the bottom of an oak barrel. The smoking temp of under 300 shouldn't lead to a fire.

Can someone explain to me, exactly, how to use an offset charcoal smoker?

HD hit the nail on the head. I would add that most of the cheap models (like I have) require a little modification to run very efficiently, and never, ever trust the factory thermometer on a cheap offset What model to you have? Welcome to the addiction!

Need Help!! Smoker wont heat up enough

I never noticed that there was a football on the left side of the chamber, I'll have to check that out tommorow. What I'm referring to on by both of the football plates is one on the smokin pro, and one on the SFB. Warthog, I'm curious how old that shaker basket is? The metal seems small...

Need Help!! Smoker wont heat up enough

I'm always surprised when I read of folks having problems getting temps up on the smokin pro with sfb. Mine always runs a nice 240 about 1/3 open on the intake. Two main potential problems: 1. Not knocking out the two football shaped pieces of metal. 2. Trusting the thermometer (factory...

3-2-1 not falling off the bone?

I put some apple juice in with it. I also don't pull based on time, I wait until it splits when I pickup half of it with thongs.
