    On Big Green Eggs, which have fairly small cooking areas, we always place a tin can (such as a coffee can) on it's side and in the middle of the grate. The brisket is placed over this "hump" and is shortened quite a bit.

    If you had dry and tough meat after having had trouble getting to, and then holding, the desired temperature of 275°F, you most probably just undercooked the meat. This condition manifests itself as "tough and dry."

    ^^^^The Yoder has a "burn pot," where the pellets go to die (catch fire); a "deflector plate", which is solid, and fits above the burn pot; and "cooking grates," on which one places items to be cooked. To what do you reference?

    At least you will get useful information from the Eastern Section guidebook; I have one, but moving westward, most of the eastern trees start dropping off somewhere in Arkansas......the Western Section trees don't start for a ways...I guess this is why they call Oklahoma the grasslands...

    It seems just about everything does that. The way my first brisket soared in temperature during the first hour of cooking, I was led to firmly believe it would be done in about an hour and ten minutes: took about thirteen hours.

    One can also check for doneness by sampling the temperature of the thigh, but it should be 5°-7°F higher than what would be indicated for the breast. I predict you're going to nail this cook!

    We use cast iron on top of the firebox frequently on our Horizon offset. We also use a Lodge cast iron trivet underneath the skillet/Dutch oven for those times the heat needs to be slowed down a bit.

    That looks very tasty.  My wife spent part of this summer in Alaska, and part of that time fishing with her sister. She sent a whole lot of fish back down here and we just grilled up some rockfish filets on the BGE (with alder wood) this evening for dinner. Oh yeah..............
