I didn't like the way I carved it,I left them in a little to long.as for the hot sauce and buttermilk, you get the flavor and none of the heat.the wife loves it like that.

I love my smoker,I've had the fire issue before. I started using less chips,just need to refill more often. But after seeing these mods,I have a project for tomorrow when my weekend starts.just hoping the wife doesn't have a long honeydo list.
I used the 321 method, 3 hrs of smoke, 2 hrs rapped in foil, 1 hr untapped and sauced every 15 minutes.started at 10:30 in the morning, finished at 4:30 pm.
as for beans Ito was kind of an impromptu dinner.no beans
