This is what I use on my 2nd generation MES 40, the side piece fits over the vent on the side and if there is any condensate dripping (which there will be) it runs straight down the bottom. I wired a plastic cup on the bottom to catch any moisture.

I was getting the same result with the 2-2-1 method, fall off the bone. I have changed to 3-1-1 and have much better results, tender but a good tug and bite.

I started doing 3-1-1 with baby backs, had the same problem with fall off the bone or too mushy for me. Used this method the the last two times and they had a great bite to them. Picked up some spare ribs today and will try your timing on them as well, make sure you let us know how they came...

Craig I have the MES 30 gen 1 and the MES 40 gen 2. It is a rare occasion when the 732 and either MES reads the same but the longer the units are on I do find the temps get closer to each other. I live where it gets much colder and in the winter months never go less than a 60 minute start...
From what I am reading you waited until the heat light went off when you first started the MES. On the initial start-up the unit will overshoot quit a bit which is what you are seeing. When I use my MES I try to warm it up for no less and 30 minutes, 60 is better. Very few smokers will match...
