I have been using that rub for years, I use it on most meats either on the grill or the smoker, works on about anything. Just have to be careful, it has a lot of sugar or sweeteners and will burn pretty easy.
Thanks Alesia, never thought of that. I read somewhere to put them on the lawn and when they lay in the damp grass from the dew they are easy to clean. I started laying them in the grass and keep the area damp with a hose for about an hour, don't know why it works but they clean right up.

The expanded metal and corner brackets I found in the hardware store, all just on the shelf. It was all regular metal, I was careful not to use anything that was galvanized.

Nepas, If you can unroll it should be ok, however I am sure that is a averaging element so you will have to get most of the probe in the unit, just make sure to check it with your remote to be sure.

Do you heat to a IT of the sticks, go by time, color or just done enough to know? I have made a couple of batches and cooled them down in ice water and then hung overnight to dry. Is there a formula or recommended time to bloom, which kinda goes back to the first...
The 5 lbs stuffer is still on sale at Northern Tool http://www.northerntool.com/shop/tools/product_200449319_200449319. I bought one of these a couple of weeks ago, used it once so far and worked ok, just be careful of the plastic gears like others have said.
I haven't tried putting the Qview in Word and copying the entire document yet but if that works it would be a great way to make those lengthy posts I tried this a couple of times and it does not work, the pictures do not copy over.

I made a shelf on a old gas grill bottom and works good, I do like the idea of the storage area though.

If you look at a bag of chips (not chunks) in the store I would not have them much bigger if at all. The MES is insulated pretty well so the element does not run a lot so if they are too large you might not get them to smoke.
