    What spices are you using in your rub? She could be having an allergic reaction to something in that you weren't aware of before. Like the guy above said try cooking some without smoke or rub and see what happens. That will help you narrow it down a bit.

    Sounds like a faulty element. Fairly inexpensive the replace.

    These things are hard to master bro. Stick with it and document everything you do each time with the results and see where the common problem might be and adjust. Took me a couple years and doing a couple a months but boy I put out some killer brisket now.

    Temperature is just one factor. Learn to use feel as well eventually you will know when it is ready.
