    Specklebelly Goose: Field=>Plate View

    Ok, this is not a legit Qview because I am roasting these specks. Although I like smoked waterfowl, it is a meat I prefer to either roast or grill with a small amount of smoke. I know there's a few waterfowlers on this board that would like this recipe with whole ducks or geese. It just so...

    MES-vent and air/smoke control

    I should have been more clear. When my vent is as closed as it gets, it's still cracked a little. Plenty of smoke rolls out. I don't know if this is normal or if my vent is a little off. So it sounds like most of you guys have your vents open once you start cooking. Wide open?

    MES-vent and air/smoke control

    I have always just kept the vent of my MES closed regardless of what I was smoking. Anyone have any links to info about this matter? Should it be open for some meat and closed for some? ANy info would be appreciated. Thanks.

    I was able to make my first two really good pulled pork shoulders thanks to everyone for the help over in this thread http://www.smokingmeatforums.com/for...ad.php?t=80528 along with reading up on older threads in this forum. I couldn't decide whether to foil or not foil, so I did one...

    Pork Shoulder Pulled Pork Questions

    Thanks everyone for the thoughtful responses so far. Rivet, why do you prefer to not foil? Do you think it sacrifices good smoke time? (just guessing because that's what my amateur logic leads me to believe) All of the finishing sauces sound excellent. I will be probably be trying a couple of...

    Pork Shoulder Pulled Pork Questions

    Ok, I have used the search function to read a lot of great info on pulled pork. I have done my research here. In fact, I found this great forum through a referral on a hunting site I frequent because I was asking questions about PP because my first attempt was mediocre at best. Here is what I...

    Smoked Pheasant Qview

    The beer/wing sauce is pretty tasty. I do that with most of my geese/duck and pheasant legs. It really tenderizes them. I've never had pheasant legs smoked then crock potted, it definitely adds another element. Rivet, I can't say if the brine helped or not since this is the only smoked pheasant...
