There are several here that use it and put out some great looking brisket. It is on my list of things to try. From what I understand, it works great on wrapped brisket. I'm sure they will be along to post later.
What smoker are you using? If you are going stick burner then my opinion is no binder needed but I may do mine differently than you. I don't use a binder but I also don't wrap. The bark is always great. If I use gas or electric I might use some mustard to aid in bark development. Just my .02. I...

Mayo isn't a keto no go. The recipe calls for kewpie mayo. It is a Japanese mayo that is loaded with sugar so it's a keto no go. I used regular mayo with some golden lankato sweetner.
