From what I have read here on SMF, the water pan actually helps to regulate the temperature within the smoker more consistently so you don't have hot or cold spots inside. You're well on your way it sounds. the larger water pan is also a good idea.

Nice smoke ring 83! I buy my BBRs at Costco all the time as well. They are good quality and taste great. I have experienced the same thing as you described. Out of the same package and they are different tasting sometimes. I'm glad they are packaged 3 racks to a pack!

Bill, like fpnmf and Smoking Gun said, if your butt was done in 5.5 hours, your probe is suspect or you didn't have it deep enough in the roast. You should have expected it to go at least 9 hours (1.5hr per pound). Perhaps you had it too close to the bone which can give a faulty reading as...
Hatch chili is the only way to go! After I roast them, I freeze them as well. I put them in ziplock bags, freezer type. About 5 or 6 to a quart size bag. Then, just pop a bag out of the freezer, put in the microwave for about 3 or 4 minutes and the skin just peels off real easy. Chop it up...
