    i'll go that route with the local grocer, don't have a true good butcher near me unfortunately. hopefully they can accomodate. thanks for the name suggestions too, appreciate it all.

    does anyone have a problem finding beef ribs full plate? i can only find them cut in individual pcs and want to smoke a whole flat plate of them but can never find them. is there a good spot online that i could be missing? have a craving to try to smoke them

    8 lber i usually get that done in 9 to 10 hours at the same temps, depends on the cut of meat, outside temp etc. good luck, pork butt was my first try too and did great with it, got me hooked!!!

    New guy in Philly area

    Hi everyone, Paul here from the Philly burbs hoping to check things out and talk smoking meat!  currently have a Weber Kettle and Masterbuilt Electric smoker and a Weber gasser as well.  its the start of a great season so hopefully i can spend a ton of time outside smoking and kicking back beers!
