    My dad grows far too many toms for the two of us and neighbours, so I de hydrate the over ripe ones and turn into 'tomato salt', this year I'm going to try hot smoking them then de hydrating them for smoked tom salt.  You can't beat the smell and taste of home grown toms, yours look lovely.

    If brass fixings are ok to use, you could get an 'end' piece and 'straight' piece compression joints (for plumbing).  Drill a hole a couple of thou larger than your probe dia. and screw them together.  Did you try doing a search on grommets?
