    Hey all! Haven't been on here in about 4 years. Some of you might remember me as the dry aged prime rib guy :D. I actually just got my first smoker for my birthday coming up. Its a Camp Chef STX. If anyone has this smoker could give me some tips on it? I plan on breaking it in for about an hour...

    I use coarse salt personally. And no I haven't buy I will try it! I had another steak the other day. Still just as good after it was frozen too!

    yes the salt was stuck together. I just put it in the oven for 20 minutes and its good as new to reuse! I use Himalayan sea salt. You can get a 5lb bag from saltworks.com for $19 shipped.

    that might pose to be a problem as you always have to check on it every so often to make sure the parameters are correct. I do not use cloth as I feel it is unnecessary.

    Well the boss and I had our amazing dinner. I have to say it was incredible! The meat was so tender you didn't even need a knife. Had it with some dere little trees called asparagus or something :blah: At least they were drenched in butter and cracked pepper :wink:

    Today is the day! Waited a LONG 28 days to make this. Sliced the rind off That marbling Before trimming. After trimming Not much scraps. I will be cooking these babies tonight!!!
