Cold smoking is achieved at temps generally below 70F. Also depends on what your smoking and the ambient temp...but at the limit of 70F cold smoking cheese would be a messy proceedure. I doubt with any sort of burner in your smoker you'll be able to stay under 70F.

Thanks....I can see that...My rest was probably longer than most....it was just over an hour. I left the probe in but not connected (had other stuff in the smoker) so I dont know how far it carried. WIfe an I like it rare to medium/rare..Mother in Law cant stand to see any pink.
