    Winter Weather In Michigan

Good idea on hard shell sheds. Was hoping to not spend that much, however going inexpensive won’t do any good if it rips to pieces. Where I am in Michigan we get close to 100” of snow a season. There were a lot of positive reviews on what I was considering, but some mods would need to be...

    Winter Weather In Michigan

With cold and winter coming up faster than I would like, and being in Michigan, I’m looking for a setup to get some protection from the wind and snow. Building something permanent is not something I want to do, so I’m looking for something I can set up later this fall and leave it until...

    To wrap or not

My wife and daughter prefer fall of the bone so I wrap, however I would agree with @terpdx and experiment.

    Epic Fail on Oklahoma Joe

I’m not an expert, and only have made 1 brisket so far in my OKJ Highand, however made several on other smokers, but here’s my thoughts. First, never had a fire go out, but I would think with no fire for the short time you described didn’t help but shouldn’t create a disaster. Internal temp...

    Brisket First Attemp

First Brisket in OKJ Highland. Turned out ok. Nice bark, good flavor, juicy, passed pull test. Family enjoyed it. Did learn several things. Need to work on trimming skills. Some areas too much removed, some not enough. Was about 11 lbs after trimming. Seasoning was just salt and pepper...

    Cutting Boards

I need to acquire some good cutting boards. Leaning towards the Epicurean brand of cutting boards. A search shows discussions about them from 6-7 years ago. Those that have had them since then, how are they holding up? I need to get at least 1 large (20” x 15”) for slicing...

    Books with more than recipes?

I’m 1/2 way through Aaron Franklin’s Meat Smoking Manifesto. I find it a good read so far and gets into plenty of detail from woods to smoker set up. As well as how he started.
