Welcome to the forum from Michigan. I too had temp control issues with my LP Masterbuilt. I chalked it up to user error until I did some search and bought an OKJ Highland offset to see if I liked that method before dropping the $$$ on a better quality rig.

I just purchased the Char-Broil grill top for the Oilless fryer. It’s actually designed for the Char-Broil Big Easy 3 in 1 but works on my unit to convert the fryer to a gas grill if needed.
Update. I decided to go with the unit I posted photo of earlier. 10’ x 10’.
Assembled last Wednesday. On Friday the 21st we had steady 15-20 MPH winds with gusts to 30....all day long.
To my satisfaction the portable shed held fine. The tie downs did their job and everything came through...
My brother in law bought a ZGrill back in early August. So far he likes it a lot. He does have an older vertical charcoal smoker that he’s used for many years.
His opinion is the Masterbuilt adds more smoke, but not enough to trump the “set it and forget it”’ feature of the Z Grill.

This topic reminds me that for the first time in about 10 years I have to go retail for my beef.
I had a local guy process 1/4-1/2 a cow for me every year. Sadly he is no longer in business and trying 2 other local guys their meat was frankly not good.

Majority of what I use mine for is bread. I mix up enough for 2-4 loaves at a time. Running as long as needed to incorporate the ingredients, typically 8-10 minutes on medium setting. I haven’t experienced any issues.
Exactly how I learned from my grandmother too. She made the best egg salad, but never wrote down anything either and almost 10 years later I still haven’t been able to replicate hers even though I know all the ingredients she used.

I had a propane Masterbuilt similar to yours for many years and turned out many good meals.
I found that maintaining a temp can be a challenge in colder weather, much more so than my offset...
Did you probe it? I’ve had them hit temp I was looking for but when probing could feel it wasn’t there yet. (When I say probe, I mean for tenderness not temp)
