    Cleaning your cooking grill?

For my smoker racks and pans, I throw them all into my recycling bin with dishwasher soap and fill it with water for an overnight soak. The next morning, everything comes off the racks with a garden hose and sprayer... done!

How does everyone route probe into MES??

And I run mine through the vent. That way it's not in the way when you're spritzing or foiling during the smoke. Only problem is the meat that has the probe, kind of awkward getting some foil on that. Rick

    Brisket with Qview

Here's the brisket (pastrami) sliced. While it tasted really good, I wasn't very impressed with the tenderness. It rested about an hour after the 3-2-1, wrapped in foil but is not as tender as I thought it would be. I don't think I'll be doing another one for a while. The blue plate special...

Agreed. Haven't found the full, untrimmed flat yet without the "additives" in my stores, but still looking.

    Brisket with Qview

Saw a few of you do some flats, so I thought I'd give it a try. Got a 4 lb'er at our warehouse store BJ's. You can see on it's label that it's cured with water, salt, and a bunch of other stuff. I read on another post by Smokin365 that he thought it came out salty and perhaps should have...

    Finally, first brisket w/ qview

I'm wondering what made it salty. Did that brisket have the seasonings already on the meat? The ones I've seen usually has the seasoning "packet" inside which you would open and add to the boiling water to cook the brisket. I'm planning on smoking one of those babys this week as well. Rick

    beer butt chicken

I've heard of beer butt chicken on a BBQ grill but haven't seen it done in a smoker. Will it get hot enough in the smoker to allow the beer/bbq to steam the inside of the bird? That is the objective right? Rick
