Smoked jerky does not need added cure - why ?
Because the 'smoke ring' is actually a layer of meat CURED by the nitrous oxide in the smoke.
Soooooooo Any meat as thin as jerk is going to have a smoke ring all the way through and hence be cured...

I just won't eat shop bought any more - period.

yep 205 no problem at all. I've run all my smokes at or below 200. And aprt from ribs - which were my only failure to date - everything cooks just fine and in fact if you read the smoking books - particularly rytek kutas bible - he recommends never smoking much above 160 anyway :-)

you'd have to cram sausage, bacon, fatties, hams, pulled pork, loins chops etc into one seriously over crowded forum :-)
It takes some getting used to but once you are it works :-)

Looks like a good option and easy to do. What grade/thickness plywood are the sides made from ?
I really have to find a cheaper way of smoking stuff. The bradley works a treat but costs £1 ($1.30) an hour to run in wood pucks.
