    My new smoker has arrived.

I am actually skipping two days of work for this long awaited event. I am seasoning it today, then cooking all day tomorrow. I just had a change of plans though. Just doing chicken tomorrow and then ribs for Saturday due to friends who want to eat constraints. Well, it is built and in the back...

    My new smoker has arrived.

Well, I stayed home from work today because my new GOSM Big Block was due to arrive. The delivery guy showed up at 6:20 this morning which I was a little surprised by, especially since I had been given a time range of 10:00 AM to 2:00 PM. I have opened the box and inspected everything and it all...

    Something other than mustard

I have not had too much trouble getting the rub to adhere, but it is a little difficult sometimes if you have to move what you are cooking and just wondering what the difference would be. I might try the water and flour or soy and flour thing to see how the bark comes out, or might even try the...

    Something other than mustard

Well, I asked this question in someone else's thread and did get one response, but I thought I would put out a general question in my own thread instead of hijacking someone elses. I have the unfortunate experience of being allergic tto mustard seeds, so using mustard, dry or wet, in cooking...

    Mustard on pork?

Any suggestions for something to use other than mustard? Unfortunately I am allergic to mustard seed so I obviously cannot use that.

    the Other kind of Ham

My amateur radio license actually just expired recently, and I haven't done much with it in a while so I did not go to renew the license. I guess I used to be KA1VOM.

    Food Saver Vacuum Sealer

Well nh3b's, if you ever need any of that fish vacuum sealed, I am right up the road and it will only cost you a fresh fish or two. I also have the Foodsaver V2480 and it has been great for storing and marinating. I can't see not having one since I also have a Sam's membership, and I can't...

Getting a new smoker, have some questions.

Those mods don't look too difficult, but think I am going to end up with the big block. I have to agree that it is better to have more room just in case than to run out of room. Also, is there any good (and not terribly expensive) way of putting a smoker on a wooden deck. Just more convenient.

Getting a new smoker, have some questions.

I currently have an ECB that has served me well for a while, but am looking at getting a propane smoker since they seem to be a bit easier to maintain temps in than charcoal. I am looking at the different models of the GOSM and have done a lot of reading on both on this forum, but am having...

    best beer for BBQ

I am a fan of many beers and a bit of a beer snob I have to admit. My general favorites do tend to be IPA, and there are four IPA's that I have been drinking while smoking lately that I would highly recommend. My general beer that I always have at the house is Harpoon IPA, tasty and light. I...

Relative newbie with a question on an ECB

In trying to maintain the airflow to the charcoal, I ordered and tried a few things. I ordered some weber charcoal rails and they worked ok, but were loose and the charcoal still seemed to egt smothered by the ashes. I also ordered the weber charcoal baskets, which are two stainless half round...

Relative newbie with a question on an ECB

I modified with most of the same things on that site, I am still working on putting holes in the lid though. He also put in some charcoal rails but did not talk much about it and I was thinking of doing the same, but I found these baskets that work exactly like the rails and was looking to see...

Relative newbie with a question on an ECB

Earlier this year I inherited an ECB smoker from my parents who no longer use it. After doing a lot of research, I have done many of the mods that people recommend on this smoker and Have done some pretty good meals with it. So far I have done the charcoal pan mod with the holes in the bottom...
