I just put the Baby Back ribs on. We plan on eating the ribs tonight. Using apple wood, and I'm having a time with the temps, 39 degrees with 10-15 mph winds. I think I've got the temps headed back in the right direction with some wind blockers.

Please forgive me for a dumb question but why is the temp probe in the apple? Is the apple to eat or are you timing the ribs this way?
