    Hey FBJ, The stumps is a smoking machine. I use a Maverick wireless thermometer that transmits food temp and cook chamber temperature so I don't have to keep babysitting it.     Thank you Ron, I will cook to temp, just trying to judge what time to start. We are having long distance family in for dinner on their way through town. If done early can meatloaf be wrapped in foil and towels to rest until the dinner bell rings?
