Thanks Twig. I purposely didnt drill the very center hole in the bottom of the pot for thar exact reason. I also avoided drilling out some of the very outer holes so there is more steel to heat up. I'll see how it does with the test burn.
How far down did you put your top rack? Just...
I am just about finished with my mini-wsm build (pictures will come after I paint it) and have a couple of questions for those of you that have used the Vasconia 32qt steamer pot as the center section.
For my build, I just drilled holes in the bottom of the pot using the steamer insert as a...
6 hours for a 4lb butt, probably wasnt cooked long enough. What temp was the meat when you took it off the smoker? Generally for pulled pork it has to get up to 205* to be fall off the bone. Most (not all) foil the meat at 165* and then keep cooking until it gets to 205*. My guess is it...

I have yet to make my first Fatty. I almost got up the courage for the throwdown, but got hung up with other things. I think a lot of people make 1lb-ers but I guess it all depends on how many you are feeding. As I said., yours look great.
I read this article on Slate back at the end of July, noting the lunacy of the Ethanol policy. (the U.S. ethanol industry is using domestic corn to make ethanol (which we have to much of) and shipping that fuel to Brazil while domestic livestock producers are importing Brazilian corn so they...
Congrats on the Permit! Looks great. I love this build. Now that you have a roof, and running water, all you need is a place to sleep and I can move in.!
Speaking of the health inspector, I guess she is no engineer. She wants the sinks in "front" so the public could see them. That would...
