    I would guess that the AMNS or AMNPS would work great for something like this.  Little heat generated.  Add in a shallow pan of syrup while smoking some cheese or other cold smoking.

    Foiling first would severely reduce the amount of smoke intake.  I've foiled, but only to help get through the stall. I'm too impatient to go without foil the whole time.

    I've scored a couple of these.  I've told them the are great for brining turkeys or big hams etc. and they are usally happy to oblige....IF they have an empty.  The issue is timing.  They usually immediately toss them and unless you are there when they have an empty then end up in the trash.

    So if my math is correct, each of the mini-weaves is four slices of bacon?  That seems about right for a BLT.  I was thinking that the mini-weave would be an awesome looking/delicious topper for a cheeseburger.

    Smoked Prime Rib vs Brisket?

    Smoked Prime Rib is outstanding.  I tried it back in September and it came out great.  At 4.99 a pound, you can't go wrong.  I've also seen people smoke  a chuck roast to similar, less expensive, results, but it needs to cook longer and probably to a higher temp to get tender meat.

    BT Broiler - The marinated ones were more tender than the rubbed version.  As they cooled off they toughened up a bit, but were still good, so you have to serve them right away.   Problem, as usual, is the bacon at the lower temp.
