I always have the charcoal grate inverted when the CharGriller is used for smoking. This is most of the time. I only place it in the normal position when throwing in lump for grilling.

Sure looks like an untrimmed spare rib slab to me. Get them that way all the time 3 in a cryovac bag. Get them from BJ Wholesale or Restaurant Depot. I just remove the membrane, dry rub and smoke em 3-2-1.
Tastes fine coming out of that steamer. You need to go to a good kosher deli and find out what real pastrami tastes like. Getting hungry just thinking about a nice pastrami on rye.
