Will do. We use drip pans under everything and the rf plate runs most of the way to the end. In our case the chance is small but there. I did have a small one once where the pans weren't positioned right. Luckily no harm was done. I've watched it closely since then.
My oldest just graduated high school tonight. As soon as he got back home we put 9 butts on the big rf and started feeding it. It's currently 12:07 where I am so I will be sure to post up the pics. Most of them will be finished shots as we did all this in the dark.

I made the switch and haven't looked back. They are consistent and it's probably my most used piece of cookware right now. Everything is clean and after the rewire is done, it's all plug and play. I went with the wifi model just because they are easier to program or change on the fly.

You will like it. I got the annova unit from Costco as a Christmas gift. I've used it in several cooks and thaws. Get a good vacuum sealer and quality bags. Other than that, the sky is the limit. You will take to it very quickly.
The wrapping and straight to the cooler part could have lead to overcooking. Most folks here let them rest for at least 1 and up to 2 hrs on the counter before going into holding. The temp will continue to rise if not left to rest before the cooler. I'm sure others will chime in but that's what...
I'm careful when it comes to mold, especially dark/black mold as it can be highly neurotoxic. That said, I'm not sure what this is. I wouldn't use it personally but others here may have much more insight on this.
