    9 butts and a Grad

Absolutely it is! I love doing these type of cooks. My little buddy is helping on this one and it may be his last one for a while. He reports to his internship on Sunday then in August he is off to Mississippi state university. I'm taking my time on this one and keeping temps lower just to spend...

    9 butts and a Grad

Will do. We use drip pans under everything and the rf plate runs most of the way to the end. In our case the chance is small but there. I did have a small one once where the pans weren't positioned right. Luckily no harm was done. I've watched it closely since then.

    9 butts and a Grad

My oldest just graduated high school tonight. As soon as he got back home we put 9 butts on the big rf and started feeding it. It's currently 12:07 where I am so I will be sure to post up the pics. Most of them will be finished shots as we did all this in the dark. 8:01 am - 2 butts down...

    MES 40" Control Panel Question

^^^^ this I made the switch and haven't looked back. They are consistent and it's probably my most used piece of cookware right now. Everything is clean and after the rewire is done, it's all plug and play. I went with the wifi model just because they are easier to program or change on the fly.

Stack size on my new smoker

The stack looks too small and possibly too short. Like the others have said the collector is restricting alot from the looks of it due to spacing off the chamber and lack of plenum. A combination of two or 3 things going on it would seem. I haven't run the numbers but have you plugged those into...

    SV requesting intro tips

You will like it. I got the annova unit from Costco as a Christmas gift. I've used it in several cooks and thaws. Get a good vacuum sealer and quality bags. Other than that, the sky is the limit. You will take to it very quickly.

    Fall Apart Brisket

The wrapping and straight to the cooler part could have lead to overcooking. Most folks here let them rest for at least 1 and up to 2 hrs on the counter before going into holding. The temp will continue to rise if not left to rest before the cooler. I'm sure others will chime in but that's what...

    Fall Apart Brisket

How long did you let it rest before going into the cooler?

    Ok to use

I'm careful when it comes to mold, especially dark/black mold as it can be highly neurotoxic. That said, I'm not sure what this is. I wouldn't use it personally but others here may have much more insight on this.
