If you have the new MES 40 2.5 with Bluetooth you you don't have to pull out the chip tray and loader. You can set the amps right on the bottom under the water pan next to the heat element and it won't get dripped on there.
I do like the 4 probes but I need the range of the radio frequency. Bluetooth here at my placement of my smoker prevents any farther range than 20 feet.
I personally smoke awesome briskets with just rubbing with SPOG the night before. I always leave the fat cap on and face down. Meat is not a sponge and will not absorb any fat when the cap is on top. It'll just run down the side and off. It may keep the outer layer moist, but I want more bark...
