From your description it sounds like a member of the maple family. Without seeing it I can't tell you exactly which one. How big is the tree and what does the bark look like? Maple is fine for smoking, has a light taste, kinda sweet. As long as the tree is healthy and is in fact maple, I'd use it.
I prefer the 2-2-1 method. You can try both and see what works best for you. I've tried the 3-2-1 method but I thought the BB's were overcooked. Using the 2-2-1 method they taste great and wont fall apart when you try to take them out of the smoker.
