    Help, Need another AMNPS

My youngest daughter has had a never used MES 30 sitting outside her garage for at least a year and is getting tired of the fiance not using it. She now wants me to teach her how to use it. First step I need to make a mailbox mod for it. Should have everything in my garage. The one thing missing...

What is a simple or ordinary thing that you can't do well.

According to the She-Beast I can't load the dishwasher, in fact I've banned from any and all attempts. I am however allowed to unload it. Matter of fact I don't seem to be able to do much of anything right. LOL Of course if things get backed up, I will jump in and do it my way. Any complains...

    My Final Porterhouse Cook (Pics)

Ok, you wanna thorw in the towel on shortloins, fine by me. But now you got my curiousity up as to why your steak came out that way. I have my therory but want to hear more. Maybe if we can figure out what happened it may help someone else down the road and perhaps you will give this another...

Setting Auber PID Temp, Time, and Other Values

Should be exactly that way. Just did mine the other day. Curious why you get a solid blue light. That means it is connected to wifi. Slow blink, trying to connect to wifi, faster blink waiting for wifi set up. Is your wifi or another in range unsecured ? Have you entered the password and only...

MES 40 rebuild - back insulation replacement?

Let us know how this works out. Not the first time this has come up. I had doubts being we are talking temps well below where the ceramic was intended to work, still might though.

    Red pearl onions fermented.

Might have to give this a shot. I tried to make Kimchi and Kraut a year or 2 ago. Both complete fails. I bought seals, weights and jars just for fermenting and collected alot of recipes, but just kinda lost ambition.

    Ok, show those Christmas scores!

I got the same rifle. Headshot only gun. My buddy in Memphis was inspired and got one as well. He learned the hard way to maintain the headshot rule. LOL

    Ok, show those Christmas scores!

I got a ham press and a Marianski book, with a backorder of Jeffs book (itll be here Febuary). Now I'm off to see what more I can find to make in it. I'm hoping it will be useful with small batch experiments. Maybe I can make lunchmeats and smoke them afterwards.

    Chopped Ham

I usually just chop/dice my leftovers pretty fine and use on sandwiches just that way. I plan to get a Ham Press soon (thanks to SherryT and a few others). I started researching recipes for it and results were limited. I saw many that used cured ham, but I wanted to cure it myself. I suggest...

    Has Anyone Else Done This!?!

Yep, done all of the above. Try working 2 jobs 7 days a week and clock in at the wrong job. Then the other job calls to see if you are coming in.

Soo working holidays, who else lives the dull life?

Whats a holiday ? I've worked Grocery meat for 20 years and I think it has ruined holidays for me forever. These are days to be dreaded. So many holidays have a meat theme and so many people have unreasonable, misconceived, uninformed or ill-advised notions about the meat and it's my fault it...

    MES 30 PID Temperature Issue

Most just route the probe lead thru the vent and clip/set it on a rack within inches of the meat. I believe @chopsaw may have used the original hole, but not a stubby probe. The heatsink theory might be correct in this case.

Recipe for sausages...Store bought or Homemade?

I have stated before I prefer to mix my own. I have used some good mixs at work and could most likely find them online somewhere. I have had too many times a product was longer available for whatever reason (quit carrying it, out of business, Pandemoic ect.) or the recipe changed. Just seems a...

This could be great or a big fail

Schnucks puts them on sale every couple months or so. Lately the sale price has been about .20 higher. If it turns out good, sale ends Tuesday or wait a month or so.

    Pork Roll...had to try it!

Well Dang, here we F'n go again. You folks are getting into my pockets for something I didn't know I needed. Gonna put one on my Amazon list along with Maraski's book and see what shows up under the tree. If not, I'll order after Christmas. On the plus side, I think y'all showed me another use...

    Fresh Jalapenos for sausage ?

We used 24 oz. for 25 lb batch. No idea what that equals in dried. Maybe you can dry 24 oz diced japs and tell us what it weighs afterward.

    Fresh Jalapenos for sausage ?

work used to use them for jap/cheddar brats. I think they went to dried in the mix because of the short shelf life on the peppers we ordered in. The box had enough for 50 lbs sausage with a 3 day life span or so. Usually only made 25 lbs every 4 days. I'll try to find the ratio we used of fresh...

    Brer Rabbit Molasses Gone???

I seldom use molasses for anything, but due to this post I had to check it out at the store where I work. We have plenty of it, but the label doesn't look like what's shown above. The shortage may be due to a lable/packaging change over. I've seen it a few times where something disappears for a...

    Whats Your Comfort Food

For me almost anything homemade, built more for taste than magazine pictures. From something simple like a Mater Sammich to a well fried pork chop with taters and gravy to something on the order of Squibbs Jambalaya.

Perfect Dino Rips cook and then my MES died

I have little faith in All-In-One products. Seems most will in deed do all to some degree and if you are lucky they will do one of them well. At least that has been my experience. I bought my MES 30 knowing the short comings with full plans to add PID later. That would be my suggestion.
