Last fall at the end of October I shot a swan. Yes it is totally legal. This past weekend I smoked the drumsticks and the breasts I just done in a crock pot with Lipton Onion soup mix. The drumsticks were wrapped with bacon so it wouldn't dry out.
The breasts cooked on high for about 8-9...
Last weekend I smoked 4 cornish game hens and 4 1/2 lbs of bulk venison sausage. I brined the game hens overnight, seasoned and stuffed sliced sausage under the skin per Cowgirl's tip.
The bulk venison sausage was already pre seasoned/mixed so all I had to do was form it into balls. Also...
I'm well aware of that, I have ice fishing equipment. We've had a lot of snow this winter. A lot of lake access has been blown in by snow. You'll either need a 4 wheeler or snowmobile to get around and I have neither. Plus all the snow on the ice is causing a lot of weight and causing water...
I'm going to smoke a venison pastrami (Cowgirl's recipe) tomorrow and the drumsticks from a swan I shot last fall. Should have some Q-view to post when it's all done.
Smoked rabbit is another thing on my list to do. I might have to take a walk through the river bottoms this weekend and see if I can find any to shoot.
Then maybe around the campfire after telling stories about the one that got away I break out the guitar and have a little jam session. Drinks always go down better with some good tunes.
