    VA Newbie

I'm thinking no slaw myself--this might also be good with chicken!

    VA Newbie

Welcome to the forum. Where in VA are you from? I went to Richmond and Norfolk last year a few times on business and got to try Pierce's Pit BBQ in Williamsburg--good stuff. When you get around to those egg rolls make sure you post a recipe and Q-view, I'd love to give that a try.

    First try at spares

I found spares on sale a few weeks ago so I figured it was a good time for a first try. I had intended to smoke these yesterday but I ran out of time to have them ready for dinner. Fortunately I had today off as well so they just got a little extra time in the marinade. I used marinade/mop and...

    Tried a new restaurant today

Agreed, our local field guy took me to Pierce's when I was in the area last April. Great stuff and a very reasonable price. This place does some volume. I believe I remember reading that they actually used pork loin rather than shoulder for their pulled pork. I am very fortunate that I get...

    Beginer in KC!

Welcome to SMF! I didn't think there was such a thing as a beginner in KC, I thought you were born with it! Good luck getting your smoker tuned up. I'm sure somebody with experience with your gear will be around soon.

    Annual Daytona Party!!

Sounds awesome! I think you will need more beans. We nearly took down a 1x recipe with just 6 of us. There was only about a cup and a half left. I have a rack of spares to throw on for the race myself--it will be my first time with ribs. I'm getting OK with butts and briskets.

    Smoking pork for tamales

Well the tamales came out pretty nice. There were plenty of leftovers. My phone crashed mid-week so I couldn't get the pictures off. The pics are of the pork shoulder as it came out of the foil, and the pan of tamales steaming in my wok. It's covered in corn husks so you can't see the...

    Feed for homeless...

I've seen in the upper midwest different projects where hunters donate game to feed the hungry, maybe you can partner with something like that. Good luck with your project!

How did you come up with your screen name?

I'm Dave, and the Z is for my old Datsun 240z which I unfortunately sold about 5 years ago. Maybe I'll pick up another someday.

    Smoking pork for tamales

Thanks for the encouragement--the tamales are steaming right now and should be ready in about an hour. Green chili cornbread--I like that! You should post some recipes. I'm looking forward to seeing how these come out.

    Pork Butt ?

Just a reminder that it is always best to thaw meat in a refrigerator--second best choice would be under cold water. Safety first, always make sure the meat stays below 40 degrees.

    Smoking pork for tamales

Well the pork butt went on my smoker/grill last night. I put it on at 7pm and then foil wrapped it at 10pm before bed. Pulled off this morning at 200 degrees, let it rest, then pulled it just now and tossed in some BBQ sauce that I made last night with tomato paste, onions, ketchup, brown...

Suggest a Rub for Pulled Pork Newbie

And a tip on using the forum search--just using a short word like "rub" will yield results in nearly every thread. Add some more details for better results. As for rub, I haven't made my own yet but will be trying soon. Some of the "off the shelf" rubs I've had luck with have been from...

Tailgate at Last weeks Patriots game (image heavy)

Looks good--especially the ribs! Question on the tenderloin: How did the teriyaki marinade work out for you? The last time I tried doing one like that it came out waaaaaay too salty. I really enjoy pork with asian marinades, but teriyaki and soy is always really salty. Most pork around here...

    First charcoal smoke disaster. Q-View

Did you use a water pan, and if yes, did it boil off? I couldn't tell from the pics. Sorry I can't be of more help. I use a larger version of that Char-Broil gas grill you have in the background to smoke.

    Some SOB stole my smoker!

Keep an eye on Ebay and your local Craigslist--maybe it will turn up. That's a bummer. Good luck with your next build.
