I would say what you had is darn good. I tend my stick burner every 30-45 minutes. Can't say as I have ever heard of an all night load in a stick smoker.
Kitchen counter height is a good place to start. Best to block it up and find best height for you while reaching into the back to tend the meat. Also make sure the door clears your head when open. Nice smoker build.
