Does adding stuff to a brine....

Man, I love a food fight...especially Dave turning a egg red to prove his point. Which he is right but did not say why he is. So here is my 2 cents. inkjunkie, yes WATER-SOLUBLE seasonings (juice of onion garlic) do penetrate meat along with the salt water. But only goes as far as the brine...

    Oversizing a fire box

I would say what you had is darn good. I tend my stick burner every 30-45 minutes. Can't say as I have ever heard of an all night load in a stick smoker.

Question(s) for 250 Gallon Trailer Builders

Kitchen counter height is a good place to start. Best to block it up and find best height for you while reaching into the back to tend the meat. Also make sure the door clears your head when open. Nice smoker build.

    Brining and tempature

Hi Norma, I did not see anywhere you stated how long you cooked your turkey breast. The longer it takes to cook the easier it is to dry out the meat. I do not slow cook meats unless they have collagen that needs to break down. Turkey, chicken and pork loin have no collagen. I cook them with a...

Turkey Poll- dry or moist white meat

Its funny how we like things we grew up with. I had a waffle for breakfast the other morning. I really don't care for waffles anymore as I'm older and tastes change. My grandmother always made them when I was small and visiting. At that time I loved them almost floating in syrup, which I don't...

    Need a propane steam table

What would you think of using a BBQ grill large enough for three pans. Most that size have three burners one for each water pan. If you can find one with a hood large enough to fit over the pans bonus. Even if you had to buy two grills its still cheaper.

legal question , any lawyers on the forum ?

Hi cal, I contacted my insurance company asking about insurance if I were to do cooks for people. They said as long as I just cover my expenses, no profit, that my home owners insurance would cover me. I live in Michigan and could be different in other states or insurance companies. If its open...

    Pulled pork

Hi Sally, I have spent 20 hours cooking shoulder at 225 degrees. I would suggest  you start out much higher and slowly lower your temps into the finish. I start around 300+ and finish below 225 taking my temp down through out the cook. Keeping in mind about half the difference between were the...

    Briquettes turning grey..

I have never waited for all the coals to turn grey. But then I do not use fluid to start the charcoal. I think that is somewhat a rule if you use fluid to start the fire. Good luck with your smoking. By the way I think you made a good choice.
