    To clarify, you let it sit open (Unwrapped) in the fridge overnight.  So, NOT vac packing right away is better?  Or does it matter?

    So many have commented on 3 weeks to wait to eat once you vac pac or wax seal. - I get that....the mellowing, etc.  What I don't understand is the wait after the smoke to cool and seal.  In other words, is there a difference in waiting 3 hours or 1 day before putting just out of the smoker...

    What is the optimum size chunk for smoking?  Has anyone experimented with 2" 4" 6" or larger blocks?  What about round cheese, like Gouda, what would be the optimum for the largest part of the wedge be?

    Thanks for the info.  I'm pretty set on the newest GEN 2.5 BT ....and with what I read, 40 provides the most versatility and ability to put a full rack of ribs in.  From what I can figure out is they put either 4 or 6 racks in both the 30 and the 40.  From what I have read ALL 30s are 800 watts...

    Thanks for that tip.  If I purchased in a store, it would be bass, as they are closer to me.  Amazon now has the 40, available June 30 for $392.20 delivered (PRIME) but with only 4 racks.  Still need to know the fundamental difference, if any, between the ELITE and Non ELITE.

    Can someone tell me the difference between the Elite and non Elite versions of the Gen 2.5 MES that I see.  Regardless of size, 30 or 40 the only difference I can see are the amount of racks that come standard.  4 in the 30 MES non elite, and 6 in the 30  and 40 Elites. Am I missing anything...

    Just spoke with customer service, price for new 3rd GEN MES will be $329.99.  Stores should have them first week of December.

    I am considering the 30".  Was going to get the GEN2.  I don't care about the bluetooth, but have some questions regarding the other features.   Regarding price, they basically cut out the remote they shipped with GEN2, and now make you supply your own remote, at their cost of a dollar or two...
