I have the GOSM big block with vents top and bottom and always run with them all at full open.
Forget the thermometer on the door. Pretty but useless. On a middle shelf place an extra probe through a potato and set on the shelf for a much more accurate temp. And do not depend on a shelf...
If you are gonna smoke it why not treat it like a huge ABT?
Slice length wise, scoop out, give a light coat of EVOO on the skin, and then start with some crumbled bacon to line the cavity, cream cheese and whatever else comes to mind. Maybe some crumbled fattie, be sure to add some fresh sliced...

Well, now. Maple is actually a really good smokin' wood. Take it off my land and get it in my wood pile.
Well seasoned maple compliments cherry, works well with mesquite and tempers hickory. I seldom use maple alone but when I do I am not disappointed.
As for maple bacon, that bacon is maple...
I use cherry all the time. And like others I mix it with maple and occasionally some store bought mesquite. The cherry I use is either chokecherry cut off my land or an occasional cherry log that gets delivered in my firewood. Come to think of it, the wood pile is where I get my maple, too!

Excellent post. Think I can help you with the taters. After washing the taters run a stainless kabob shaft through them. It will carry heat to the inside as the outside cooks and takes up smoke.
And for more garlic taste, try adding a bit of garlic powder to your rub. Garlic powder...
