I use a bread pan in mine, when you're useing a lower tempeture I feel the thinner the pan the quicker it will smoke. Sometimes you kind of wonder if it will start smoking, but it will in time.
HAHAHAA you and me both Zapper. That's all that's stopping me.I just bought a slicer around 3 months ago. But it's only a 7 1/2 incher, and now for the same price I can get a 12" DAMN!!!!
I've been thinking on getting one, just to see if I like making sausage. Before I shell out a lot of money for the bigger guns. I've been hunting on E-Bay for the metal one, I don't think the plasic one is as good.

Chris, I really never heard of anyone marinating a brisket. I would agree with Glued, Maybe they really meant rubed. I know my wife gets things confused all the time.

Brent on this one the best thing to do is check out a few of the post's. This question will never be answered, it'll be your choice. Everyone has different thoughts on this one.
Just read a few and pick what you think. If you don't like the way it turns out. Next time do it the other way.
As far as a shoulder goes Zapper nailed it. When ever I smoke a Picnic I take the skin off. But make sure you leave the fat cap on. The last one I done was around 9lbs. And at 220 it usualy takes about 12 hrs. But with the platue(I hate that word) it may change. Good Luck.
I never have enough time to leave mine in the smoker for the full time. I live dead in the city, and if my smoker is still lit after dark they call the cops on me. You have to be so many feet away from your house, and that would put me right in the middle of the street. So I don't want to piss...
