Does the searing actually affect the taste, or is it just for the grill marks? That looks REALLY great, if searing makes a differance in the taste, I would sear it on the grill first for just a couple of minutes over a very hot flame correct?
I've always wanted to do the smoky okie method but never had any way to get the high heat to sear it. But at last some one just gave me a little charcoal smoker. It's really small and short but I bet I could fill it with lump charcoal and sear my brisket. As soon as I do it I'll post some...
Jaye I have both the small one and the wide body. It's funny how mostly every one that has bought the smaller one has now gotten the bigger one. Trust me get the wide body, if your limited to space you won't need 2. And you WILL end up getting the wide body.
