    Chef, there is no real reason to go low and slow with a chicken. Go ahead and crank it up to at least 325. As far as brining goes, definitly brine it. It'll make a world of differance.

    dganor, I don't think you will find a brisket that is good for smoking at 3 lbs. You will probably get one from the supermarket that has been trimed of the fat and it will run you in the 3 or 4 dollar a lb range. At least that's the way it is here in Phila.     I had the smoker right about 225 the whole time. I foiled it around 160 to get some juice. Took it out at 180, wrapped it in a towel for an hour so. Then slice away.

    Yepper they are thick, it took over 6 1/2 hours to get them done. But I would do it again in a heart beat, they were good. My wife couldn't even finish one. No big deal I helped her out.
