I have only done the 2 day or longer bear method but have had nothing but compliments from it. I will definitely try your seasoning, though may stay on the longer time frame. just out of habit. I also never have leftovers from those meals. Far too many requests for "samples".
I don't have that style but my experience with wood fires say you have far too much wood waiting to burn chocking the air flow causing excessive smoke. Not to mention that if/when they ALL finally catch the temp will rocket up.

I do not have it yet, it was offered to me last night. I guess it is a medical storage refrigerator so maybe no plastic? I am just checking out the possibilities of doing such a thing. I would most likely be using a computer fan as they are cheap and not over powering. I can post pics of it if...
I have the opportunity to get a high grade dorm style refrigerator that I would then like to mailbox and use for cold smoking. Any tips, ideas or warnings to look for? Also would it be useful to use refrigeration itself to help with cold smoking?
