Bought an el cheapo years ago and did the 50 hr chucky. Sold right there on it. Used for other cooks to great satisfaction. Currently looing for a newer, better version as this one is out on loan to teach a buddy it's usefulness.

Yeah I always aim to have the "salted" side hit the tongue first. Just "seems" to hit the flavor profile more. I didn't realize some applied a whole science to it, just a preference to me. Always thought it was because I have always been a salt-a-holic for most things, until I got old.

I have even held google drive availability viewing for certain files for the masses.
I use Plex and 2 separate drives to prevent file loss. I never got around to doing a NAS, but I'll get there someday. Also backed up my music on the drives too.

And the wife wonders why I prefer chips for my pulled pork over rolls. It may not be nachos but I can eat more than her and not even realize it. I treat it as a dip in all actuality.
Gave up on wrestlefesting years ago but keep trying to get the daughter to get away from the cheap arse ramen and doctor it up to be good. I'll definitely show her your version to get her thoughts moving.
